4 Tbsps apple cider vinegar
4 Tbsps olive oil
1 tsp honey

Preparation steps

1.

Rinse arugula, trim and spin dry. Cut beet into thin slices. Peel apples, quarter and core and cut into small cubes.

2.

Mix vinegar in a bowl with oil and honey and season to taste with salt and pepper. Add apple pieces to the bowl and mix.

3.

To serve, decoratively arrange beet, arugula and goat cheese on plates and drizzle with apples and dressing.
