Preparation steps

Cook the wheat berries according to package instructions.

Peel the asparagus, cut off the woody ends, cut the stalks diagonally into 3 cm (approximately 1 inch) long pieces and cook in boiling salted water for about 7 minutes. Drain, rinse under cold water until cool then and drain again. Peel the carrots, halve lengthwise and cut diagonally into slices. Rinse the green beans and trim. Blanch the carrots and green beans, separately, in boiling salted water for 8 minutes. Shock in ice water and drain.

Let the wheat berries cool, mix with the vegetables, parsley, lemon juice and olive oil and season with salt and pepper. Serve in small serving bowls.
