- 1 Zucchini (finely diced)
- 1 yellow Bell pepper (finely diced)
- 2 Tomatoes (halved, seeded and finely diced)
- 1 red onion (halved and cut into thin strips)
- 200 grams Wheat grain
- 1 Tbsp lemon juice
- 2 Tbsps White vinegar
- ½ tsp Mustard
- 3 Tbsps sunflower oil
- salt
- freshly ground peppers
- 1 garlic clove
- 1 bunch Cress
- 2 Tbsps scallions

Preparation steps

Rinse the wheat grains and soak overnight in 1.5 liters (approximately 5 cups) of water. The next day, bring to a boil with the soaking liquid. Reduce the heat, cover and simmer for about 45 minutes. Pour through a sieve, rinse with cold water, drain, spread out on a paper towel and pat dry.

For the salad dressing, stir together the vinegar, lemon juice and mustard. Season with salt and pepper and incorporate the oil with a whisk.

Drizzle the salad dressing over the vegetables and mix with the wheat kernels. Let stand for about 1 hour. Serve topped with watercress and chives.
