8 scallions
1.333 cups Smoked tofu
soy sauce
4 Tbsps lemon juice
1 stalk Lemongrass
2 shallots
1 pc freshly grated ginger (thumb-sized)
4 Tbsps Wok oil
2 cloves garlic cloves

Preparation steps

Pat the scampi dry. Wash and trim the spring onions. Finely chop the white parts and cut the green parts into 1-2 cm lengths. Carefully dry the smoked tofu and cut into 1-2 cm cubes. Trim the lemon grass and chop very finely. Peel the shallots and garlic and chop very finely. Peel and finely grate the ginger. Heat 2 tbsp wok oil and saute the ginger, shallots, chopped spring onion, lemon grass and garlic. Add the tofu, scampi and spring onion greens and stir-fry for 4-5 minutes. Season to taste with soy sauce.
