- 200 milliliters Espresso
- 4 egg yolks
- 60 grams sugar
- 250 grams Mascarpone
- 2 sheets gelatin
- 120 grams Ladyfinger
- 3 tsps cocoa powder
- 100 grams Almond slivers
- 2 Star fruit
- 4 Kumquat
Preparation steps

Beat the egg yolks and sugar until frothy. Stir in the mascarpone. Soak the gelatin in cold water, squeeze well and dissolve over a hot water bath. Mix the gelatin with a little of the mascarpone cream. Add the rest of the mascarpone cream and mix thoroughly. Immerse the ladyfingers in the espresso and place half in the bottom of a baking dish. Spread half of the cream on top and smooth. Place a second layer of the soaked ladyfingers and cover with the rest of the cream.

Chill for 4 hours in the refrigerator. Dust thickly with cocoa powder and sprinkle with almond slices. Rinse the fruits and cut into slices. Serve the tiramisu with the fruits.
