1 cup
1 pint Coconut water
2 ozs sugar
2 sheets gelatin
9 ozs Arborio rice
1 small ripe Mango
1 Kiwi
1 Orange

Preparation

Preparation steps

1.

Split vanilla bean lengthwise and scrape out the seeds with a knife.

2.

Bring milk, coconut water and sugar to boil in a pot. Add the vanilla seeds. 

3.

Soak the gelatin for 10 minutes in cold water.

4.

Slowly stir the rice into the milk mixture, cover and cook over low heat, stirring occasionally, for 25-30 minutes.

5.

Transfer softened gelatin to a small pot and heat over low heat until it has dissolved. Stir dissolved gelatin into the rice pudding and let cool for about 30 minutes.

6.

Meanwhile, peel mango, cut flesh into slices around the pit, then cut into strips (about 2 x 3 cm) (approximately 1 x 1 1/2 inches).

7.

Peel kiwi, halve lengthwise and cut into slices.

8.

Peel orange, removing all the bitter white pith. 

9.

Cut between membranes to remove whole orange segments.

10.

Using moistened hands (or wearing rubber gloves, form 1 tablespoon rice pudding on a platter into long strips (about 2 x 5 cm) (approximately 3/4 x 2 inches). Top with mango slices, orange segments and kiwi slices and serve.
