4 cups self-rising flour (plus extra for dusting)
1 tsp Baking powder
0.333 cup xylitol
2 eggs
2 Tbsps sunflower oil
cup milk
vegetable oil (for deep frying)

Preparation steps

1.
Sift the flour and baking powder into a bowl and stir in the xylitol.

Beat together the eggs, oil and milk and add to the dry ingredients, mixing well to a soft dough. Shape into a smooth ball and then turn out on to a floured work surface.

Roll out the dough to a thickness of about 1cm|1/2". Flour a cutter and cut out rounds, then cut out the centres using a smaller cutter. Re-roll the trimmings to make more doughnuts.
4.
Heat the oil in a fryer or deep heavy-based pan and cook the doughnuts 2-3 at a time for 3-4 minutes, until golden, then turn them over and cook for a further 2-3 minutes, until golden and cooked through. Drain on absorbent kitchen paper.
