Quark is a real fitter: the protein it contains builds muscles, and a generous portion of calcium hardens teeth and bones. The salad of radish, radish and onion provides the ideal supplement of other minerals and vitamins, as it strengthens the immune system and stimulates digestion.

The quark buffers - by the way, Bavarians call them "Topfen" cookies - taste as good cold as fresh from the pan and enrich every buffet. Those who find the radish salad too spicy round off the curd taste with tomato sauce.

Preparation steps

1.

Thaw the spinach. Trim radishes, rinse, slice into thin slices, place in a bowl and sprinkle with salt.

2.

Peel onion and cut into fine strips. Rinse chives, cut into small rings and shake dry.

3.

Drain water that has collected in radish bowl. Mix the radishes with onion and chives. Mix in mustard, canola oil and vinegar and season with salt and pepper.

4.

Place cream cheese in a kitchen towel and squeeze firmly to remove any liquid.

5.

Peel garlic and squeeze through the press. Grate nutmeg to taste. Mix cream cheese, eggs, breadcrumbs and garlic with salt, pepper and nutmeg to taste.

6.

Squeeze the thawed spinach, cut into small pieces and fold into the cream cheese mixture.

7.

Shape cream cheese mixture into 8 fritters with wet hands.

8.

Turn fritters in flour and fry in olive oil over medium heat until golden brown on each side, 4-5 minutes. Serve with radish salad.
