Preparation steps
1.
Heat the oil in a medium sized pan and cook the tomatoes for a few minutes until softened. Set aside.
2.
Break the eggs into another pan and add the milk, salt and butter. Cook over a medium heat, whisking all the time until the eggs are scrambled.
3.
Toast the bread under the grill or in a toaster. Spread with butter and place on serving plates. Spoon the scrambled egg and tomatoes on top of the toast and sprinkle with the snipped chives.
