200 grams new potatoes
1 carrot
1 egg
2 Tbsps Sesame seeds
60 grams breadcrumbs
salt
white peppers
1 pinch Nutmeg
1 pinch Cardamom
1 generous pinch cinnamon
vegetable oil (for frying)
1 Vanilla bean
Poppy seeds (for garnish)

Preparation steps

1.

Peel potatoes, cut into pieces boil until soft, about 20 minutes. Drain and cool potatoes and press and through a potato ricer into a bowl. Peel and grate carrot and add to the potatoes.

Knead together potato mixture, egg, 1 tablespoon sesame seeds, breadcrumbs, salt, pepper, nutmeg, cardamom and cinnamon. Divide mixture into 20 balls and fry in hot oil until golden.

3.

Slice vanilla bean pod into 20 strips and place one in each potato croquette. Sprinkle croquettes with poppy seeds and remaining sesame seeds and serve.
