1 red pepper (deseeded and finely sliced)
6 eggs
¼ cup butter
6 tsps double cream
1 Tbsp Chives (chopped)
4 slices Serrano ham (or prosciutto ham, torn into strips)
4 slices Bread (toasted and buttered)

Preparation steps

1.
Heat the oil in a pan and cook the peppers until softened and sweet.
2.
Crack the eggs into a bowl and beat lightly. Add the butter to the pan, then stir in the eggs. Cook gently, stirring thoroughly with a wooden spoon, moving the eggs around the pan until lightly cooked with some liquid egg still left.
3.
Stir in the cream, chives and ham and season. Serve immediately on toast.
