3 Turkey sausages
2 Tbsps Canola oil
1 tsp sugar
1 ½ cups Vegetable broth
14 ozs Diced tomatoes (canned)
3 Tbsps Tomato paste
10 ozs Corn (canned)

Preparation steps

1.

Peel onion and chop very finely.

2.

Peel carrots and cut into 5 mm (approximately 1/4-inch) dice.

Cut sausage into thin slices.

Heat the oil in a pot, then sauté onion and carrots.

Add sugar and caramelize until light brown, stirring constantly.

Add vegetable broth, tomatoes and tomato paste and stir to combine. Add corn, season with salt and pepper, cover and cook on low heat for about 15 minutes.

7.

Meanwhile, bring a large pot of salted water to a boil. Add spaetzle and cook according to package instructions. Add the sausage slices to the stew after 15 minutes of cooking and heat through. Drain the spaetzle and serve with the sausage stew.
