2 Tbsps clarified butter
1 splash dry white wine
800 grams Sauerkraut
250 milliliters Beef broth

1 tsp ground paprika
1 bay leaf
4 Juniper berries

Preparation steps

Finely dice the bacon. Peel the onion and garlic. Finely dice the garlic, and julienne the onion. Heat bacon in a pan until fat is rendered, then remove with a slotted spoon and drain. Add ground beef to pan and cook until it crumbles easily and is cooked through. Add onion and garlic, sauté briefly, then pour in the white wine.

Add the bacon and drained sauerkraut, and pour in the broth. Add the paprika, and season to taste with salt and pepper. Mix in the bay leaf and crushed juniper berries, cover, and simmer gently for 45 minutes. If the liquid evaporates completely, add a little broth. Adjust the seasoning once the cook time has ended, and serve.
