Preparation steps

1.
Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
2.
Bring a large pan of salted water to the boil. Place the oil or fat in a roasting dish and place it in the oven.
3.
Cut the potatoes in half and make incisions on the uncut surface with a sharp knife. Blanch the potatoes in the boiling water for 5 minutes then drain well.
4.
Add the potatoes to the hot fat, taking care as the fat will be very hot, and baste the potatoes with a large spoon. Roast the potatoes in the oven for 1 hour or until golden brown and crisp. Serve scattered with the sea salt.
