4 sprigs parsley
2 garlic cloves
2 untreated lemons
50 grams butter
½ tsp sharp Mustard
salt

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F).

Rinse the chicken and pat dry. Carefully cut the skin and peel it back, leaving it attached.

3.

Rinse the herbs, shake dry and finely chop the leaves. Peel and finely chop the garlic. Rinse the lemons in hot water, pat dry, zest and cut into slices.

Mix the butter, herbs, garlic, mustard and lemon zest. Season with salt and pepper.

5.

Spread the butter mixture on the chicken and fold the skin back over it. Place the chicken into a greased roasting pan with the lemon slices. Bake for about 1 hour. Halfway through the cooking time, turn the chicken and sprinkle with the juices. Remove from the oven and serve immediately.
