Preparation steps

1.

Cut chicken into 8 pieces. Carefully loosen the skin of the chicken pieces from the flesh and slide the sage leaves underneath.

2.

Put the chicken pieces in a baking dish, season with salt and pepper and baste with lemon juice. Leave to soak for 2 hours then brush with oil and roast in preheated oven (220°C, approximately 425°F) for about 30 minutes. Turn once during roasting.

3.

Rinse the tomatoes, cut in half and season with salt and pepper. Add cut side up around the chicken pieces 15 minutes before the end of cooking.

4.

Serve sage chicken and tomatoes with the meat juices.
