6 ozs Smoked turkey breast (in slices)
1 yellow Bell pepper
1 bunch scallions
4 sprigs cilantro
1 Orange
4 sheets Rice paper (11-12" diameter)
6 leaves Lettuce
salt
peppers
soy sauce (to taste)
Chili sauce (to taste)

Preparation steps

1.

Cut turkey into thin strips. Rinse the bell pepper, wipe dry, quarter and remove seeds. Cut pepper into thin strips. Rinse green onions, pat dry and cut into thin rings . Rinse cilantro, shake dry and coarsely chop.   

2.

Peel orange with a sharp knife so that the bitter white pith is entirely removed.

Working over a bowl to catch the juices, cut between membranes to remove whole orange segments.

Soak 2 sheets of rice paper in warm water until slightly softened, about 45 seconds.

Dampen a cloth and place it on the work surface. Take both pieces of rice paper from the water and slightly overlap. Rinse the lettuce leaves and shake dry.

Place 3 lettuce leaves onto the rice paper. Spread half of all prepared ingredients on the lettuce, leaving about a 3/4-inch border all around. Season with salt and pepper.  

7.

Sprinkle cilantro leaves over the filling. Roll up the rice paper into a log using the damp cloth. Repeat to make the second roll.

8.

Cut the rolls into pieces, about 1 inch wide. Serve with soy sauce or chili sauce.
