- 1 scallion
- 250 grams Rice noodles
- 600 milliliters boiling water
- 250 grams Pork tenderloin
- 2 Tbsps vegetable oil
- 2 garlic cloves
- 200 grams shrimp (ready to cook)
- 250 grams soybean sprout
- 200 grams salted Peanuts
- 2 eggs
- 2 Tbsps lemon juice
- 3 Tbsps Fish sauce
- 3 Tbsps sugar
- 1 tsp green Curry paste
Preparation steps

Trim scallion, rinse and cut into thin rings.

Soak rice noodles in boiling water for 5 minutes. Chop the pork. Peel and chop garlic.

Heat oil in a wok and stir-fry pork and garlic for about 4 minutes. Then add shrimp, sprouts and half the peanuts and stir-fry for another 2 minutes. Drain the rice noodles, whisk the eggs in a bowl and add noodles and eggs to the wok while stirring. Stir in lemon juice, fish sauce, sugar and curry paste and serve sprinkled with scallion and remaining peanuts.
