- 1 clove garlic cloves (peeled and halved)
- 4 Tbsps good-quality olive oil (divided)
- 6 ripe Tomatoes (rinsed; trimmed and thinly sliced)
- 1 Red onion (peeled and sliced)
- 1 handful fresh Basil (rinsed and dried)
- 28 mini Bocconcini
- salt (to taste)
- coarse freshly ground Black pepper (to taste)

Preparation steps
1.
Rub four serving plates with fresh garlic. Drizzle half of the olive oil over the bottom of each plate.
2.
Arrange a single layer of tomato slices over lapping one another on the seasoned plate. Top with onions, basil leaves and mozzarella. Season with salt and pepper and remaining olive oil. Serve.
