12 cups baby gherkins
1 cup salt
0.333 cup fresh Horseradish (peeled and diced)
1 handful mixed Fresh herbs (e. g. dill, bay leaves, parsley)
1 Tbsp Mustard seed

Preparation steps

1.
Rub all the gherkins with salt (approx. 100 g) and leave to steep in a covered container overnight.
2.
Layer the gherkins, horseradish, herbs and mustard seeds in sterilised jars. Add the remaining salt and fill up with boiling water. Make sure that the gherkins are completely underwater. Close the jars well. Steep at room temperature for approximately 7 days before consumption.
