800 grams floury potatoes
1 carrot
1 shallot
1 egg
1 Tbsp freshly chopped parsley
1 Tbsp Potato starch (depending on potato variety)
50 grams grated Hard cheese (such as Emmental)
salt
freshly ground peppers
Nutmeg
vegetable oil (to fry)
8 Sausage (depending on size)
4 Tomatoes
parsley (for garnish)

Preparation steps

Rinse potatoes and cook by steaming for about 30 minutes. Then peel, allow to evaporate and press through a ricer. Peel and grate the carrot. Peel shallot and finely chop. Mix both with egg, parsley, potato starch and cheese and add to the potatoes. Season with salt, pepper and nutmeg and mix to a well-moldable dough. Shape into ovals and fry portions in hot oil on both sides, turning occasionally, in a non-stick pan, until golden brown for 6-8 minutes. Keep warm until ready to serve.

Fry sausages in hot oil on all sides until brown. Rinse, halve and briefly fry tomatoes on the cut side. Place potato pancakes on a plate, top with sausages. Garnish with tomatoes and parsley and serve.
