1 pinch salt
3 ozs sugar
1 Banana (about 200 grams)
4 ozs apple sauce (sugarfree)
½ tsp ground cinnamon
4 ozs Pastry flour
½ tsp Baking powder
1 oz Walnut

Preparation steps

1.

Rinse plums, wipe dry, halve and pit.

2.

Separate the eggs. Beat egg whites with the salt in a large bowl with a hand mixer until stiff, then gradually beat in the sugar.

Peel banana, put on a plate and mash finely with a fork. Mix thoroughly in a bowl with applesauce, cinnamon and the egg yolks.

4.

Sift together flour and baking powder over the mixture and fold to combine.

5.

Fold in the egg whites.

6.

Chop walnuts with a large knife.

7.

Line the bottom of a springform pan (20 cm) (approximately/8 inches) in diameter with parchment paper. Pour in the batter, smooth surface, arrange plums on top and sprinkle with nuts. Bake in preheated oven at 180°C (fan 160°C, gas: mark 2-3) (approximately 350°F) until golden brown, about 30 minutes. Cool in pan on a wire rack, remove from the pan and serve.
