1 kilogram jam sugar
1 stalk cinnamon
1 Star anise
3 lemons (juiced)

Preparation steps

1.

Peel and quarter the pears. Remove the seeds, finely dice, and mix with the lemon juice. Puree the mixture with an immersion blender. Weigh the pear mixture, then mix in the same amount of jam sugar and the spices. Add to a pot and bring to a boil, stirring constantly. Cook for 4 minutes until the jam begins to thicken.

Remove the cinnamon stick and the star anise from the jam. Fill the prepared jars to the brim with the jam and seal tightly. Turn upside down to cool for 15 minutes. Turn right side up and cool completely.
