1 oz butter
9 ozs cream cheese
1 egg
1 tsp salt
9 ozs Spelt flour
1 pinch Baking powder
2 Tbsps
4 Tbsps Sesame seeds

Preparation steps

1.

Melt the butter in a pot and let cool.

2.

Beat the cream cheese, egg, salt, and butter until smooth with a mixer fitted with whisk attachments.

3.

Beat in the flour and baking powder. Change to the dough hook and mix until a smooth dough forms. 

4.

Knead the dough with your hands on the work surface for about 3 minutes.

5.

Cover dough and let it rest for about 10 minutes.

6.

Cut the dough into 15 equal pieces. Roll the pieces with your hands into balls and place on a parchment-lined baking sheet. 

7.

Carve a cross in top of each ball with a sharp knife, then brush with milk and sprinkle with sesame seeds. Cover and let rest for about 10 minutes.

8.

Place a deep baking pan on the lower rack of a preheated oven to 425°F/convection 400°F and fill with about 1 cup water. Place the baking sheet with the buns on the middle rack, reduce heat to 350°F/convection 325°F until golden brown, about 25 minutes. Let cool on a wire rack.
