2 cloves garlic cloves
2 onions
4 carrots
2 bay leaves
4 sprigs thyme
½ tsp peppercorns
½ tsp allspice

Preparation steps

Peel the red onions, parsley roots, celeriac, garlic, onions and carrots and cut into rough chunks. Put into a pan and cover with approximately 1.5 l water. Slowly bring to the boil, half cover with a lid and simmer gently for about 30 minutes. Then add the bay leaves, thyme, peppercorns and allspice berries and simmer for a further 30 minutes or so.

Strain the broth through a sieve and it is now ready to use as you wish.
