2 Tbsps clarified butter

Preparation steps

1.
Cook the potatoes in boiling salt water for around 20 min. Drain well and leave to cool slightly. Cut into quarters.
2.
Heat the clarified butter in the pan and add the potatoes. Fry until golden brown and season with salt and ground black pepper.
