- 2 Tbsps Oil
- 2 garlic cloves (finely chopped)
- 1 bunch scallions (cut into rings)
- 2 tsps fresh ginger (grated)
- 1 large Cucumber (seeds removed, finely chopped)
- 4 cups vegetable stock
- 4 Tbsps light Miso paste
- 3 Tbsps light soy sauce
- 2 cups Tofu (diced)
- 3 Tbsps cilantro (finely chopped)
- cayenne pepper
- 2 Tbsps lemon juice
Preparation steps
1.
Heat the oil and fry the garlic, spring onions and ginger. Add the cucumber then add the stock, miso paste and soy sauce. Simmer for approx. 4–5 minutes.

Add the tofu and the coriander and season with cayenne pepper and lemon juice. Re-heat, pour into bowls and serve.
