6 ½ cups waxy potatoes
4 Tbsps olive oil (or duck or goose fat)
2 garlic cloves (lightly crushed)
rosemary
Sea salt

Preparation steps

1.
Cut the potatoes in half if large. Heat the fat in a large pan with the garlic.
2.
When the fat is aromatic, add the potatoes and turn to coat in the hot fat. Add the rosemary.
3.
Turn the heat down to fairly low, cover the pan and cook for 15-20 minutes until the potatoes are golden on one side.
4.
Turn them over, cover again and cook for a further 10-15 minutes until tender and golden.
5.
Remove to kitchen paper, sprinkle with sea salt and serve.
