8 Sole fillet (approx. 80 g each)
1 cup smoked Salmon (sliced)
2 cups Baby spinach (finely chopped)
8 cups Baby spinach
cup fish stock
cup white wine

Preparation steps

1.
Open out the sole fillets and season with salt and freshly ground black pepper.
2.
Place the smoked salmon slices on top of the sole fillets.
3.
Sprinkle over the chopped spinach on top of the smoked salmon and season with ground black pepper.
4.
Roll the fillets up, securing with a toothpick, if you like and arrange in a steamer.
5.
Pour in the fish stock and white wine, Bring to the boil.
6.
Rest the steamer over a pan of simmering water and arrange the rest of the spinach leaves around the fish.
7.
Cover and steam for 6 minutes until the fish is tender and flakes easily.
