1 oz green Olives (pitted)
2 Tbsps Sherry vinegar
1 tsp Mustard
1 Tbsp Quince jelly
salt
peppers
4 Tbsps olive oil
2 ozs Manchego
5 slices Serrano ham
1 head Oak leaf lettuce
1 red Endive

Preparation steps

1.

Coarsely chop the olives.

2.

Mix vinegar, mustard, quince jelly and salt and pepper together in a bowl. Slowly whisk in oil.

3.

Mix the olives into the dressing.

4.

Cut manchego cheese into thin slices and crumble with your fingers (or coarsely grate).

5.

Cut the ham slices crosswise and then cut into little "flower" shapes.

6.

Trim lettuce and endive, rinse and spin dry. Tear or cut into bite-sized pieces and place in a large bowl.

7.

Mix with olive dressing and arrange the greens on plates. Top with ham and Manchego and serve.
