- 16 ozs Pappardelle noodles
- 1 cup Asparagus
- ¼ cup olive oil
- 2 cloves garlic cloves (sliced)
- 1 ⅔ cups button Mushrooms (sliced)
- cherry Tomatoes (quartered)
- Basil (torn)
- salt
- peppers
Preparation steps
1.
Cook the pappardelle in a large saucepan of salted, boiling water for 8-10 minutes until 'al dente. '

Meanwhile, blanch the asparagus in a saucepan of salted, boiling water for 2 minutes. Drain the asparagus spears and refresh them in iced water.
3.
Drain the pappardelle once cooked.
4.
Heat the olive oil in a large saucepan set over a medium heat. Fry the garlic until golden brown then add the pappardelle and toss well.
5.
Cut the asparagus spears in half down the length of their stems and add to the pappardelle with the cherry tomatoes and basil.
6.
Toss well and adjust the seasoning as necessary. Spoon onto serving plates and serve immediately.
