8 slices Bread (ready-sliced)
1 ¼ cups King prawn ready to cook (raw)
0.333 cup Water chestnut (from a jar, drained)
1 clove garlic cloves
1 egg white
2 Tbsps Corn starch
2 scallions (sliced into rings)
2 Tbsps Rice wine
Nut oil (for deep frying)

Preparation steps

Cut the crusts off the bread, press flat and toast to a light golden brown. Cool slightly and cut each slice in half.

For the topping, put the prawns, water chestnuts, garlic, egg white and cornflour in a food chopper. Add the spring onions and rice wine and chop the mixture to a coarse paste. Season with salt and ground black pepper. Spread the mixture on one side of each piece of toast.

Heat the oil to approx. 170°C (340°F). Slide the toasts into the oil, topping side downwards. Turn after 1 minute and fry on the other side until golden and crispy. Fry all the toasts likewise in batches. Drain on kitchen paper and serve.
