1 small garlic clove
3 sprigs Basil
2 ozs young Goat cheese
3 ozs Whole Grain Pasta (such as linguine)

Preparation steps

1.

Drain the tomatoes in a sieve and collect the oil in a small bowl.

2.

Chop the tomatoes with a sharp knife or roughly cut into strips.

3.

Peel the garlic and chop finely. Rinse basil, shake dry pluck leaves and chop coarsely. Crumble goat cheese with fingers.

4.

Cook the pasta according to package directions in plenty of salted water until al dente.

5.

Meanwhile, measure 2 teaspoons oil from the tomatoes, place in a skillet and heat over low heat. Sauté garlic and tomato strips quickly. Add basil and goat cheese. Drain pasta, mix with cheese mixture and season with pepper.
