- 2 Tbsps olive oil
- ½ cup onions (finely chopped)
- 3 large garlic cloves (minced)
- 4 cups water
- ¼ tsp Dried rosemary
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 4 ½ cups canned chickpeas (rinsed and drained)
- 2 bay leaves
- ½ cup roasted Red pepper (chopped)
- ¼ cup fresh lemon juice
- 3 Tbsps flat-leaf parsley (roughly chopped)
- shaved cashew cheese (for garnish, if desired)
Preparation steps

Heat olive oil in a large pot. Add onions and cook until soft, about 10 minutes. Add garlic and cook 1 minute longer.

Add water, rosemary, salt, pepper, chickpeas, bay leaves and red peppers. Boil and let simmer for 20 minutes.
3.
Using a stick blender, blend the soup to your desired consistency. Add lemon juice, stir, and cool to room temperature. Garnish each serving with Cashew cheese, if desired and additional pepper.
