Preparation steps

1.

Rinse asparagus thoroughly, peel, cut off the woody ends and cook until al dente in plenty of boiling salted water with sugar 10-12 minutes. Peel orange, removing bitter white pith. Rinse strawberries, trim and cut into small pieces. Cut asparagus diagonally into about 3 cm long pieces. Mix asparagus, strawberries and orange segments in a bowl.

2.

Combine orange juice with honey and season with pepper. Peel ginger and press through a garlic press. Toss the sauce with the salad ingredients and marinate about 1 hour. Before serving, mix in finely chopped mint leaves, and divide among glasses.
