The beautiful serving of this dish hides just how nutritious it is. In fact, this "aquarium" is packed with vitamin C from its fruit.

In summer, you can substitut strawberries, pitted sweet cherries or pieces of peach.

Preparation

Preparation steps

1.

Soak the gelatin in a bowl of cold water until softened, about 5 minutes.

2.

Heat 400 ml (approximately 1 3/4 cups) of grape juice in a pot (do not boil). Add the softened gelatin and stir to dissolve.

3.

Remove the juice-gelatin mixture from heat and let cool slightly, then stir in the remaining grape juice by the spoonful. Transfer to a bowl and refrigerate until it begins to set.

4.

Meanwhile, peel the kiwis, halve lengthwise and cut into thin slices. Rinse grapes, drain and cut in half.

5.

Remove the gooseberries from the husks, then rinse, drain and cut in half.

6.

Put half of the kiwi slices upright in 8 glasses (each approx 300 ml capacity)(approximately 1 1/4 cup capacity), then place half of the grapes and gooseberries in the middle.

7.

Stir the mineral water into the slightly-gelled grape juice.

8.

Pour half of the juice mixture into the glasses and place in freezer until the surface has slightly set (do not allow to freeze).

9.

Add the remaining fruit to the glasses and pour in the remaining juice mixture.

10.

Cover and refrigerate until completely set, at least 4 hours.
