16 ozs boneless, skinless Chicken breasts
3 cups Chicken broth
3 ribs Celery (leaves intact)
1 cup seedless, green Grape
1 cup seedless Grape
½ cup Mayonnaise
½ cup plain Yogurt
1 tsp medium hot Mustard
salt (to taste)
freshly ground Black pepper (to taste)
1 tsp granulated sugar
2 Tbsps fresh lemon juice
4 large Lettuce (washed; dried and roughly torn)

Preparation steps

1.
Rinse the chicken under cold running water and pat dry with paper towels. In a medium sauce pan, bring the chicken broth to a boil. Add chicken, reduce heat, cover and simmer for about 20 to 25 minutes, or until cooked through and tender. Remove from broth and let cool.

Wash the celery and slice the stalks reserving the green leafy tops. Set aside.

Rinse and halve the grapes and set aside.

In a small bowl, combine mayonnaise, yogurt, hot mustard, salt, pepper, sugar, and lemon juice.

Cut cooled, cooked chicken into strips. In a large bowl, combine sliced chicken, sliced celery, and grapes. Pour dressing over salad and toss to coat.
6.
Arrange lettuce in the bottom of 4 cocktail glasses. Spoon chicken salad into glasses. Garnish with reserved celery greens. Serve.
