Preparation steps

1.
Put the figs and water into a large pan. bring to a boil, then reduce the heat and simmer until the figs are soft.

Add the sugar and lemon juice and stir over a low heat until the sugar has dissolved. Bring to a boil and boil rapidly until setting point is reached.

Remove from the heat and allow to cool slightly. Stir once and spoon into hot sterilized jars. Cover, seal and label.
