4 Sirloin steak (each about 180 grams)

2 tsps clarified butter
salt
1 egg
1 Tbsp grainy Mustard
2 Tbsps medium-hot Mustard
3 Tbsps breadcrumbs
Fresh herbs (for garnish)

Preparation steps

1.

Preheat the oven to 220°C (approximately 425°F) (top / bottom heat).

Season the steaks with pepper and sear in hot butter about 2 minutes on each side. Season with salt and transfer to an ovenproof plate.

3.

Whisk the egg with a little salt and pepper in hot water until foamy, stir in the mustard and mix in the breadcrumbs. Spread the paste on the steaks and bake in the preheated oven for 5-7 minutes until golden brown. Serve garnished with the herbs.
