100 grams Coconut flakes
1 tsp finely grated ginger
2 tsps grated Lemon peel
2 egg whites
100 grams cane sugar
2 tsps lemon juice
40 Whole wheat baking wafers (3 cm diameter)

Preparation steps

Finely dice dates, mix with coconut, ginger and lemon zest. Beat egg whites until stiff and gradually add the sugar. Stir in lemon juice and fold into date and coconut mixture.

Depending on the consistency, add more coconut flakes if needed. Place baking wafers on a baking sheet. With teaspoons, transfer small portions of coconut-date mixture onto the baking wafers. Bake in a preheated oven (160°C) (approximately 325°F) until the surface is slightly golden, 12-15 minutes.
