3 ozs Dark chocolate
2 ozs Corn flakes (unsweetened)
1 Vanilla bean
½ cup white Grape juice
12 Mirabelle plums (about 350 grams)
4 ozs Quark
1 lemon
liquid Sweetener (to taste)

Preparation

Preparation steps

1.

Heat water in a shallow pot. Place a similar-sized metal bowl over the hot water. Roughly chop chocolate and place in the bowl. Melt chocolate over the hot water bath while stirring.

With your fingers, coarsely crumble the cornflakes. Remove melted chocolate from the water bath, add cereal and stir until cereal is thoroughly coated with chocolate.

Place a piece of parchment paper on work surface. Spoon cereal mixture onto parchment in 6 equal portions.

Spread the chocolate-cereal mixture into flat rounds and allow to cool until chocolate is completely solid.

Cut vanilla bean in half lengthwise and scrape out seeds.

Place vanilla seeds in a small pot with the grape juice. Bring to a boil and cook for 5-7 minutes over high heat.

Rine the plums and drain. Cut in half and remove pits. Cut into wedges and add to the grape juice. Cook for 3-4 minutes, remove from heat and let cool.

8.

Place the quark in a small bowl and whisk until creamy.

9.

Rinse lemon in hot water, wipe dry and finely grate peel. Add lemon zest to quark and stir to combine. Season to taste with sweetener.

10.

Spread each chocolate cornflake portion with the quark mixture and top with the cooked plums. Drizzle with the vanilla grape juice and serve.
