400 grams Fenugreek
2 Tbsps vegetable oil
¼ tsp ground coriander
1 Tbsp Curry powder
½ tsp crushed Red pepper flakes

Preparation steps

1.

Rinse the potatoes and parboil for 20 minutes in boiling salted water. Drain, rinse, drain again, peel and let cool completely. Rinse scallions, trim and cut into thin rings. Rinse the fenugreek, trim and spin dry.

Cut potatoes into quarters. In a pan, heat the oil and fry the potatoes, turning frequently, until golden brown. Add onion and fenugreek, stir in the spices and cook another 5-10 minutes. Season to taste with salt and serve immediately.
