Preparation steps
1.
Heat the oil and butter in a casserole and fry the chicken skin side down until golden. Turn over and cook the other side.
2.
Add the vegetables and coat in the butter, then add the stock and simmer, lid off, for 10 minutes or until the vegetables are just tender and the chicken is cooked through.
3.
Stir in the cream, season and simmer for 5 minutes, then serve in deep bowls.
