- 2 Tbsps olive oil
- 4 Chicken breasts (sliced)
- 1 bunch Asparagus (trimmed and cut into short lengths)
- 2 cups Snap pea
- 4 whole garlic cloves (peeled)
- 4 Tomatoes (quartered)
- ⅔ cup dry white wine
- thyme (or rosemary leaves)
- salt
- peppers
- Chives (to decorate)

Chicken Spring Vegetable Stew
Add 200 ml / 7 fl oz chicken stock with the wine for a loose stew to serve with crusty bread.
Preparation steps
1.
Heat the oil in a pan and fry the chicken on all sides until golden.
2.
Tip the vegetables into the pan and sauté to lightly colour, then add the wine and sage, then put the lid on and leave to simmer for 10-15 minutes until all is cooked.
3.
Season and serve decorated with the chives.
