1 organic Orange (juiced)
¾ cup slivered almonds
1 ⅔ cups instant Couscous
Cardamom
Cumin
cinnamon
cayenne pepper
2 ½ cups vegetable stock
2 Tbsps butter
1 Tbsp fresh mint (chopped)

Preparation steps

1.
Soften the raisins in the orange juice and dry roast the almonds until golden. Remove from the pan and set aside.
2.
Mix the couscous with a pinch of all the spices and add the boiling stock. Stir well and leave to steep for around 10 min. Then stir with a fork to loosen the granules.
3.
Heat the butter until it foam and fry the raisins for 1 min. Mix the raisins, almonds and mint into the couscous and serve.
