2 Tbsps Crème fraiche
4 Tbsps cream
2 Tbsps sunflower oil
2 Tbsps Walnut oil
sugar
3 Tbsps lemon juice
1 small Celeriac (celery root)
2 Pear (finely sliced)
1 ¾ cups whole Walnut (roughly chopped)
For the garnish
1 handful Cress
1 handful young Celery

Preparation steps

For the dressing, stir together the crème fraîche, cream, oils, salt, ground black pepper, sugar and lemon juice, adjusting the seasoning to taste.

In a bowl, mix the dressing through the celeriac and pear slices. Arrange in four small bowls and serve garnished with walnuts, cress and celery leaves.
