2 medium egg yolks
1 Tbsp sugar
500 grams Whipped cream
150 grams Dark chocolate
75 grams candied Walnut
Cocoa
125 grams Cherry jam
4 Tbsps Rum
500 grams Sour cherry (frozen)
1 Star fruit

Preparation steps

1.

Mix egg yolks and sugar until frothy. Beat cream until stiff and fold into yolk mixture. Chop chocolate and walnuts and fold into mixture. Pour mixture into ring cake pan, cover and freeze for 4-5 hours.

In a saucepan, heat cherry jam and rum. Add sour cherries and cook for about 5 minutes. Remove from heat and let cool.

When ready to serve, dip cake pan briefly in hot water. With a knife, carefully loosen frozen dessert from pan and invert on serving platter. Dust with cocoa powder. Arrange cherries around dessert. Rinse starfruit, wipe dry and cut into slices. Garnish with starfruit slices. To serve, cut into pieces.
