2 skinless, boneless Chicken breasts (minced)
2 boneless, skinless Chicken thigh (minced)
1 Zucchini (grated)
1 large carrot (grated)
¼ tsp paprika
salt
freshly ground Black pepper
½ cup all-purpose flour
light, olive oil non-stick cooking spray
To serve
1 small Avocado
lemon juice
4 Multi-grain roll
Lettuce
2 Tomatoes (sliced)
½ cup tomato Ketchup

Preparation steps

1.
Mix together the chicken, courgette, carrot and paprika with your hands. Season with salt and plenty of black pepper.
2.
Divide the mixture into 4 equal portions and shape into burgers. Dust with flour on both sides, to prevent sticking.
3.
Spray a frying pan with oil and cook the burgers for about 5-7 minutes on each side until golden and cooked through.
4.
Peel the avocado, cut into slices and sprinkle with a little lemon juice.
5.
Put the lettuce, avocado and tomatoes on the rolls and place the burgers on top. Put a spoonful of tomato ketchup on each burger.
