2 ⅔ cups Chicken breasts (skinned and sliced)
4 Tbsps olive oil
8 cups gluten free Bowtie pasta
2 cloves garlic cloves (finely chopped)
2 cups jarred Artichoke hearts (drained and quartered)
½ cup black Olives (pitted, halved)
1 tsp fresh mint (chopped)
2 Tbsps fresh Basil (chopped)
1 Tbsp lemon juice
¾ cup Feta (crumbled)

Preparation steps

1.
Season the meat with salt and ground black pepper.
2.
Heat 2 tbsp oil in a grill pan and fry the chicken for 7-8 minutes until golden and cooked through.
3.
Cook the pasta in boiling salt water until al dente.
4.
Heat the remaining oil in a pan and fry the garlic. Add the artichokes and fry for 2-3 mins stirring occasionally.
5.
Drain the pasta and add to the artichokes along with the olives, chicken and herbs. Stir well and heat through for around 2 min. Season with salt, ground black pepper and lemon juice. Finally stir in the feta and serve immediately.
