Preparation steps

1.

Rinse blood oranges and orange with hot water and wipe dry. With a sharp knife, cut off peel and white pith.

2.

Working over a bowl, use a sharp knife to cut out orange sections between membranes. Reserve any accumulated juice.

3.

Rinse mint, shake dry and remove stems. Chop leaves coarsely.

4.

With a sharp knife, slit the vanilla bean lengthwise and scrape out seeds.

5.

In a deep bowl or glass measuring cup, combine vanilla bean seeds, mint and sugar. Puree with an immersion blender.

6.

Arrange blood orange and orange slices decoratively on plates. Drizzle with collected juice and serve with vanilla-mint sugar.
